Ultimate Chili with Meat & Beans
INGREDIENTS
1 tablespoon vegetable oil
1¼ pounds ground turkey
1 pound ground beef (at least 80% lean)
1 medium onion chopped (about 1 cup)
1 medium green bell pepper coarsely chopped (about 1 cup)
½ teaspoon garlic powder
3 teaspoons ground cumin
1 teaspoon salt
3 tablespoons chili powder
1 29-ounce can crushed tomatoes
1 29-ounce can tomato sauce
1½ cups water, divided
1 cup V-8® juice (spicy flavor)
1 pound dried kidney beans, rinsed and picked clean
1. Place pressure cooker on a level surface, insert the pan, and plug in the unit.
2. Set Cook Time for 35 minutes and press Start.
3. Add the oil, ground turkey, and ground beef to pan. Begin browning the meat, stirring often. When meat
begins to brown, stir in the chopped onion and pepper along with the garlic powder, cumin, salt, and
chili powder. Stir and cook about 1 minute.
4. Stir in the crushed tomatoes and the tomato sauce. Pour ¾ cup water into each can and swish around to
capture the remaining tomato and then pour into the pot.
5. Add the spicy V-8 juice and the kidney beans.
6. Attach the lid and set regulator valve to Air Tight (closed).
7. When cooking time has elapsed, unplug the pressure cooker and let the pressure release naturally.
8. Carefully open the lid, stir, and taste the beans for doneness. If more time is needed, set the pressure
cooker to Keep Warm and simmer until done. Cover with the pressure lid (with valve on Exhaust) or
with the glass lid.
