Perfect Green Beans
INGREDIENTS
1 small white or yellow onion, peeled
¾ cup hot water
1 tablespoon beef base (Better than Bouillon® beef base recommended)
2 tablespoons butter
½ teaspoon ground black pepper
1–2 pounds fresh whole green beans, ends trimmed
salt and fresh ground pepper, for serving
1. Place your pressure cooker on a level surface, insert the pressure pot, and plug the unit in.
2. Prepare the onion by peeling it and then cutting it in half so that one side is the bottom half with the
roots, and the other is the upper half. On the half with the roots, score an X shape into the flat face
with a knife. Set aside. (You don’t need the upper half; save it for another recipe.)
3. In a glass measuring cup or small bowl, mix the hot water and beef base until dissolved.
4. On pressure cooker, set Cook Time to 4 minutes (or use Vegetable setting and decrease time) and press
the Start button. Add the butter; when it begins to melt, place the onion face down into the butter. Cook
quickly for 1–2 minutes, but do not let the butter brown. Add the water/bouillon along with the
pepper.
5. Toss in the green beans.
6. Attach and lock the lid of your pressure cooker.
7. Set the pressure control to Air Tight (closed).
8. When cooking time has elapsed, release the pressure manually by opening the pressure control valve to
exhaust.
9. Once the pressure has been released, carefully open the lid, discard the onion, and serve immediately
with salt and fresh ground pepper.
